Raw Chocolate Truffles

What better way to celebrate hump-day than with some healthy little raw chocolate truffles! I finally got this recipe just right and these little balls of bliss are the perfect fix for a sweet tooth moment AND the macros are pretty amazing too. You can add in other things like nuts, seeds or cacao nibs- experiment and let me know if you come up with any mind blowing flavour combos. Enjoy

1/4C cacao powder
1/4C almond flour
2 pitted medjool dates
1/2 scoop protein powder ( I use Cellucor Cinnamon Swirl)
1/4C baking stevia
1 Tbsp Walden's Farms Sugarfree syrup (if you can't find a sugar free one you could use honey/agave/rice malt or just add more water and sweetener)
25g desiccated coconut, plus more for rolling
10g chia
1/8-1/4C water or coconut/almond/normal milk) for mixing

These are really easy to make! Just chuck every thing except the water in a food processor (you can do this by hand but then you have to chop the dates up really really fine and smash them around with a spoon!) and blend. Slowly add the water bit by bit until the mixture is at a rolling consistency. Spoon out into balls, roll in coconut and refrigerate. Couldn't be easier, yummier or healthier.
